So, until I got pregnant the first time, I hated hard boiled eggs. Then, after I had my daughter, I had a friend force me to try a deviled egg. Needless to say, I'm now addicted. The best recipe I've found so far is on pinchmysalt.com. I've modified it a bit to suit my tastes and I'm going to share it with you!
Ingredients:
6 eggs, hard cooked and peeled
1/4 cup mayonnaise
1 teaspoon yellow mustard
3/4 teaspoon white wine vinegar
pinch of salt (optional)
fresh ground black pepper (optional)
smoked paprika (optional)
Cut hard boiled egg in half, pull out the yolk and put in a bowl. Arrange egg whites cut side up on a plate. Mash yolks with a fork. Stir all the ingredients (except the paprika) into the bowl and mix until smooth. Now, this is where I do things the cheap way. Instead of using a pastry bag like she does, I use a spoon to put the mixture in a ziplock sandwich bag as close as I can to one on the bottom corners and cut a tiny piece of said corner off to make my own pastry bag! Squirt mixture into each egg white half. Add dash of paprika on top. Serve. Tah-dah! Simple, yet delicious. And something the hubby can take to work! All the other men will be jealous. As it was, someone stole the ones my husband left in the refrigerator at work so I know they were a hit!
